Preheat your oven to 325° F. Add the banana, protein powder, and oats to a medium sized bowl and mash it all together. Slowly add the almond milk and stir until there are no remaining chunks.
Add the cinnamon and vanilla extract, and stir well. Next, stir in the 1 Tbsp shredded coconut, dried cherries, and chocolate chips and stir it all together.
Form into 6 cookies on a cookie sheet (or spray the pan beforehand), then sprinkle the remaining 1 tsp shredded coconut evenly on top of the cookies. Bake for about 20 minutes or until slightly browned on top.
