These bite-sized cookies are made from healthy ingredients like oats, bananas, and pea protein powder.
We love them best warmed up and dipped in coconut or almond milk, but you can also bring them with you as a snack to have throughout the day.
Preheat your oven to 325° F. Add the banana, protein powder, and oats to a medium sized bowl and mash it all together. Slowly add the almond milk and stir until there are no remaining chunks.
Add the cinnamon and vanilla extract, and stir well. Next, stir in the shredded coconut and chocolate chips.
Scoop the cookies onto a cookie sheet (spray the pan beforehand so they don't stick), then place in the oven and bake for about 20 minutes or until slightly browned on top.
Makes approximately 22 mini cookies.
