Pear Overnight Oats

Scrumptious breakfast with a fruity theme - great for a mid-afternoon pick-me-up!

2 Red pears (341g)

1/8 tsp Cinnamon (+more to taste)

1 tbsp Maple syrup

1/4 tsp Vanilla extract

3/4 cup (65g) Large flake oats

1/2 Scoop (17g) Vanilla protein

2 tsp (8g) Chia seeds

1 cup Soy milk

18g Pepitas


Wash and chop the pears. Heat a non-stick skillet on medium heat, and saut√© the pears until soft. Mix often and monitor the heat closely. Season with cinnamon, maple syrup and vanilla extract towards the end of cooking, when they begin to soften slightly. 

In the meantime, mix together the oats, protein powder chia seeds and soy milk. 

Transfer the cooked pears to the bottom of a large mason jar or container. Top with the oats mixture. Top with pepitas. Refrigerate overnight or at least a few hours.
