This warming scramble recipe is super-easy and quick to make, with minimal ingredients, and packed with protein and calcium. Enjoy for a light breakfast or as a lunchtime snack.
1 block regular or firm tofu (454g)
1 tbsp nutritional yeast
1 1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp turmeric
1/4 tsp pepper
- Heat a frying pan on med-low heat.
- Crumble the tofu over the pan, either with your hands, or using a spatula or fork. Add the remaining ingredients. Combine the tofu and spices well so that it's evenly coated.
- Cook for a few minutes, stirring often. To prevent sticking, monitor the heat, and add a bit of vegetable broth, plant milk or water as needed.
- Serve warm, as desired.
Keeps in the fridge for at least 5 days in an airtight container.
