Kiwi Blackberry Chia Pudding

This guilt-free dessert will super charge your omega 3, and is rich in soluble fibre, giving your gut a helpful boost too. Kiwi is a great source of vitamin K and can help you get a better night’s sleep. “Chia” is the ancient Mayan word for strength, and we think this makes a great post-workout treat!

Ingredients


1/4 cup (40g) chia seeds

1 cup (250ml) soy milk

1 tbsp (15ml) maple syrup

1/4 tsp vanilla extract (optional)

134g blackberries

111g kiwi

Directions


  1. Combine the ingredients together in a jar. Mix really well, otherwise, the chia seeds will clump up together.
  2. Place the chia pudding in the refrigerator and let thicken for 1 hour or more.
  3. Add fruit of your choice. (You can place the fruit at the bottom of the jar, or layer it if desired.)
  4. Chill and serve.

Refrigerate, covered up to 5-7 days. 

(It keeps longer in the fridge without the fruit added to it, so that's something to keep in mind for meal prep.)
