Kiwi Blackberry Chia Pudding
1/4 cup (40g) chia seeds
1 cup (250ml) soy milk
1 tbsp (15ml) maple syrup
1/4 tsp vanilla extract (optional)
- Combine the ingredients together in a jar. Mix really well, otherwise, the chia seeds will clump up together.
- Place the chia pudding in the refrigerator and let thicken for 1 hour or more.
- Add fruit of your choice. (You can place the fruit at the bottom of the jar, or layer it if desired.)
- Chill and serve.
Refrigerate, covered up to 5-7 days.
(It keeps longer in the fridge without the fruit added to it, so that's something to keep in mind for meal prep.)
