High Protein Meal
Golden brown tofu sautéd with mixed veggies on a bed of brown rice with a citrus dressing.
- 50 grams Black Beans, Canned (Drained)
- 40 grams Chickpeas, Canned (Drained, Rinsed)
- Juice of 1 Large Lemon
- 45 grams Brown Rice, Cooked
- Half Avocado, Black Skin
- 30 grams Extra Firm Tofu
- Half Red Tomato, Raw (Medium)
- Half Carrot, Raw (Medium)
Cook the brown rice according to package instructions.
Slice and sauté the tofu until golden brown. Drain and rinse the black beans and chickpeas.
Slice the tomato and grate the carrot.
Slice the avocado when ready to serve.
Arrange all prepped ingredients in a bowl and drizzle the lemon juice before serving.
