Protein Punch Bowl
17g of protein in this light lunch serving! If feeling adventurous - try blending the tomato with some raw garlic, black pepper, dash of chilli and coriander to make a salsa topping.
- 50 grams Brown Rice, Cooked
- 50 grams Black Beans, Canned (Drained)
- 50 grams Chickpeas, Canned (Drained, Rinsed)
- Juice of 1 Large Lemon
- Half Avocado, Black Skin
- 40 grams Firm Tofu
- Half Red Tomato, Raw (Medium)
- Half Carrot, Raw (Medium)
Cook the brown rice according to package instructions.
Slice and sauté the tofu until golden brown.
Drain and rinse the black beans and chickpeas.
Slice the tomato and grate the carrot.
Arrange all ingredients into an instagram-ready serving dish (!)
Slice the avocado only when ready to serve and add into the dish, and drizzle with lemon juice.
